... probably 20 of them from my friends garden.

WOW!:eek: When I first read your post, I thought "where can you grow coconuts in the US?" DUH! How fortunate you are to get them local. I know there is a HUGE debate now on the chemicals used on the young coconuts! Oh if I could only grow a coconut tree!

The young Thai coconuts - take a heavy knife. Using the corner edge of it, the bottom part near the handle and cut all the way around the top. You have to hit pretty hard, then pop off the top.
Mature coconuts - poke out the eyes (gosh - THAT must hurt), then drain the milk, then I take an old pillowcase and slam them onto the sidewalk, road, or hard surface. Then the pieces separate easily from the shell. I don't worry about getting all the "brown" off. The hard shell pieces yes, but not the "skin". I grind the pieces and freeze them.

OK, just a question about them. I opened one the other day and put the remainder in the fridge overnight, I found it to taste rancid the next day. How do you KEEP a coconut ?:(

I don't keep them. I personally do not like young Thai coconuts. Mature ones, yes. The young, I don't know what it is about them that I don't like...:confused:

Solace - I freeze the leftover coconut milk and meat. I put both in the blender and then put it in a container for the freezer. I use the frozen mixture later for smoothies.

Funny, western people suggest poking out the eye of a coconut...

because it thailand, you crack the other side open.

Since my coconuts come straigh off the tree and aren't pre-cut for ease, I use a machete to get the green part off, and then 4 hard hits in a square shape on the top and BOOM, it's over flowing.

I'm pretty good at it now. I can't get one dehusked and open in about 1 minute.
