Hello everyone, I have a pesto sauce adiction, lol!

I have tried making one raw pesto recipy so far but found that it was too strong and potent so it wasn't enjoyable. Is there any way to fix this? Also I was wondering if everyone could leave thier pesto recipies so I can trying making them and see which one I like. This has been the only thing standing in my way of being 100% raw. Thanks:D

If you have Alissa's book I LOVE Gus's pesto (check the index). It is quite thick and filling but OMG is it ever good. If you want to thin it I'm sure you can just add a tad more oil.

You can also just use more nuts or less garlic.
Adjust it to your taste.

Traditionally, pesto is supposed to be VERY strong because you would normally only use about 1 tablespoon for a bowl of spaghetti noodles.

heres mine:

a bunch of basil
a handful or so of spinach--basil is usually so expensive and ive found you can extend the recipe by using some spinach too, along with the basil and still get a good basil-tasting pesto
handful of walnuts or soaked almonds
a lemon (without peel)
garlic
sea salt
olive oil to taste and desired texture
(you could also substitute a bit of water for some of the oil)

put in blender or food processor, process to desired consistency. YUMMY

chopped black olives or sundried tomatoes or tiny chunks of red bell pepper might also yummy additions.

mine is similar to above recipe,
basil, pine nuts or cashews or both, lemon juice, olive oil, crushed garlic and just spin around in the processor. yum!

If you don't like basil, make pesto rosso with sundried tomatoes, v.addictive, or sundried sweet red peppers ( for Aussies and Kiwis red capsicum) also addictive.
