Anyone use the pulp from your juicer for any recipes? I have been using the carrot pulp to make carrot cake, but I wanted something for myself?

Crackers?

Soups?

Any other ideas?

Portiz,

Use the carrot pulp to make mock tuna. Just use Alissa's mayonnaise recipe, throw it in the pulp, add celery, onions, whatever you like, and voila. Delicious mock tuna. :)

Thanx!! I've ordered Alissa's book and DVD...should hopefully have it by the end of this week. Any other ideas besides also composting? Which it looks like I'll be doing that this spring for my gardens.

Great Idea! Have you ever used Alissa's sauce in her Almost Tuna recipe with the pulp? I will have to try that.

Portiz, In the meantime...

Mayonnaise (from Doe on Alissa’s site)

Blend until smooth:

* ½ c almonds, soaked and peeled
* 1/4 cup water
* ½ lemon, juiced
* 1 small garlic clove
* ½ tsp salt

Add in a steady stream, until emulsified:

* 1½ c olive oil

(Store in a glass jar in the refrigerator for up to 2 weeks.)

You can use it in almost any cracker or bread recipe for a different texture and taste. Experiment!:D
