View Full Version : Dehydrated Veggie Crunchy...thing

I wanted an alternative to nutty/seedy/oily crackers, so I tried this, and it turned out pretty nice! A cool way to get more veggie matter into my day : )


(This makes 1 sheet.)

9-10 oz. of Broccoli or Cauliflower, or both (I used both)
1 - 1 1/2 cup(s) of tomato (I used grape tomatoes, I wanted it sweet.)
1 - 2 carrot(s)
Spices. (I used a couple dashes of cayenne, a tbsp. or so of dry basil, and salt to my liking.)

Put the ingredients into the Food Processor (or maybe vitamix, I haven't tried..)
This doesn't smell all that fantastic, but spread it on a mesh/teflex dehydrator screen (Thick-ish), and dehydrate untill crispy/dry.
It was surprisingly good! It was nice to snack on later in the day, without guilt or the indigestion I get from eating nuts :)

So this is like a veggie cracker?? OR does it stay together?? Sounds good. I will definitely give this a try, I'm trying to give up on some of the sweets....and this might just fill the bill. Thanks for sharing.

If you dehydrate it thickly enough, it will stay together in a cracker. I made more last night, and this morning it was cracked all over, so it was in smaller bits...but I already ate it and it was still delicious!
So maybe not so much for dipping things, but for just a crunchier snacky way to eat veggies instead of nuts, this is good!

I think I remember reading somewhere on this forum that someone added a bit of psyllium seed husk to their veggie cracker to hold it together and it seemed to work well for them.

Just a thought - thanks for sharing the recipe

WOW, sounds great,

I always make onion bread
flax seed crackers
or almond crackers,

Now, I have a cool veggie cracker

Wow - that sounds really yummy! I am going to have to try that one. I like nuts fine, but can over-indulge from time to time.
