Everything I seem to make is cacao or carob based.:o
So what are your favorite desserts that do not use chocolate or carob?

My favorite "dessert" is dates pitted with soaked/blanched/dehydrated almonds slid inside. Lots of "creamy, sweet, crunchy" goodness! This is what my SAD eatin' mom said tasted like "pecan pie"!! I eat about 5-6 at a time for dessert, or well, who am I kiddin', sometimes I eat this FOR dinner!!;)

I make RP's brownies without cocoa or carob and also just leave it out of other recipes and don't really notice much difference in flavor because I never used much of it anyway. I also enjoy a pecan inside of a date, yum!

I like to make cookie dough... I take my leftover nut milk pulp and dehydrate it, then grind it in a food processor to a flour. Then I add some agave/honey/maple syrup (whatever you like to use), some coconut oil, some vanilla and whatever spices you feel like. Viola! Cookie dough. This is fabulous if you actually form it into cookies and dehydrate briefly (dehydrate briefly?) too. You can add other things, like nuts, dried fruit pieces, or cacoa nibs.
I've gotten a couple friends hooked on these. These and the bok choy chips have caused a couple to go buy dehydrators! :D

Here are two of our favorites!
Rhio's Celestial Pecan Pie
5 bananas
1 papaya (or mango, or a pint of strawberries, sliced)
1 cup pecans (soaked in water for 1 hour)
1 ½ cups pecans (don't soak)
6 ounces filtered water
5-10 dates, soaked
½ vanilla bean, cut into tiny pieces
1 tablespoon heaping raw honey (or to taste)
dash of Nama Shoyu
1) Soak one cup of pecans in filtered water. Set aside.
Fruit Crust:
2) In a 9-inch glass pie pan, arrange one layer of sliced bananas (2 1/2 bananas should do it). Lay the banana slices in a spiral pattern with one slice slightly overlapping the other until you have covered the entire pie pan. Also put a layer going up the sides of the pie pan. Next, cut the papaya into 1/4 inch thin slices and layer the papaya over the banana. Over the papaya, put another layer of slightly overlapping banana slices. Now with your hands, compress the fruit down evenly. Set aside.
Filling:
3) In a blender, put 1 cup of soaked (drained) pecans, dates, 6 oz. filtered water and tiny pieces of vanilla bean and blend to a fine cream. Taste the cream, and if it is not sweet enough for your taste, add more dates.
4) Pour the cream over the fruit in the pie pan. Put the pie pan into the dehydrator and dehydrate at 95 degrees Fahrenheit for 3 hours.
5) In a small bowl, blend the raw honey with just a little water and a dash of Nama Shoyu. Prepare the unsoaked pecans for the topping by tossing gently with the honeyed water to coat the pecans.
6) After 3 hours, take the pie out of the dehydrator and place one layer of the prepared pecans on top of the pie. Place them artistically radiating towards the center of the pie.
7) Chill the pie at least one hour before serving.
Keeps for a few days in the refrigerator.
C's notes: So simple yet out of this world!
Rawguru’s Fave Cookie Dough Recipe
1 ½ cup cashews or almonds (soaked, then dehydrated) and ground to a flour (we use almond pulp)
5 tbs. coconut butter
2 tbs. agave nectar or 7-10 dates
½ vanilla bean (seeds only) or 1/2 tsp. extract
Pinch of celtic sea salt
1-2 pinches cinnamon
pinch of nutmeg
coconut water to make it moist
In a blender or food processor, process till it comes together and forms a dough, add more coconut water if it is too dry or more almond flour to make it more doughy. Then shape into cookie shapes and dehydrate at 105 degrees for 10 hrs or until nice and chewy.

I love these too! Thanks for the reminder!
I also take an apple slice and a slice of date and eat them together. It's kind of like an easy caramel apple.

Okay, I have to ask, what are your bok choy chips? I used to love eating bok choy in my stir frys.

I LOOOOOVE my bok choy chips. Inspired by the kale chip recipe that's been around here....
Basically I chop the stems off some baby bok choy and marinate briefly in nama shoyu and sesame oil. Then I lay the leaves and stems on my dehydrator tray and dehydrate for a few hours until crispy. The leaves crisp up quickly but the stems take a bit longer.
Make LOTS. They are addictive.

Sorta along the same lines... I made Maraw's Chocolate Chewies but without carob (humm, what does that make them then? No Chocolate Chewies?:D ) and a pinch of nutmeg.
