Now what? LOL I bought it on a whim just because the store actually happened to have it. Anyone have any recipes for it?

Oh sure! Do a search. That's used to sort of hold things together. At a higher temperature it is coconut oil, then when cooler, it solidifies and becomes butter.
Some folks add it to smoothies.
It's used in "frostings/icings"
Lots of stuff!

I've heard some negative things about Coconut Oil. Because it's the type of oil that solidifies, isn't it bad for you? It basically solidifies in your arteries like saturated fat does? Can anyone shed more light on this? I admit that I haven't looked into it, and just heard these comments in passing. Given this topic, I figured I'd ask while I'm here.
PS. I'm definitely hoping it's good for me as I really want to use it, a lot :P

No coconut oil is not the same as the saturated fat. It never gets competely soild also. Remember there is as difference between COCO BUTTER and Coconut oil. They are 2 different things. COCO butter becomes SOLID rock hard solid at room tempture. Coconut oil will is more solid is not rock hard at room tempture. Coconut oil is a good saturated fatty acid. It actually takes the bad fat out of your body.
I have some everyday in my seed milk
Either Seseame seed milk or almond.
I use tahini or almond butter 2 tablespoons
add this to 2 cups water
1 banana
raw honey to taste
cinnomin and vanilla opt.
1 tablespoon coconut oil

GreenSky - coconut oil/butter is a GOOD fat. Not all fat is bad.
