I want to make lemon cookies and the recipe calls for shredded coconut. I am not a big fan of dried, mature, shredded coconut, so is there something else that can replace it besides nuts?

I wonder if shredded carrot would work? shredded and dehydrated a bit? dunno

I love coconut. I'm trying to think what is a similar consistency...

You want to make a cookie where the main ingredients are coconut and nuts - but you want to make them without any coconut or nuts?
Hmmmm, that's a challenge.
What about looking up one of the yummy oatmeal recipes instead and just adding some lemon juice and zest to those? There are also some yummy biscotti recipes floating around that are just begging to be made into a lemon-poppyseed recipe.
Just my thoughts, good luck :D

Thanks for the ideas, the cookie called for lemon, shredded coconut, no nuts. I just didnt want to replace the coconut with nuts. I took veganforlife's advice and used carrot instead. Predehydrated, it tasted good and lemony.

That does sound pretty good. Let us know how they turn out once dehydrated!

The cookies were good. I didn't taste the carrot and the texture was chewy. The taste was very lemony.
