Yippee. I only have almonds and sunflower seeds in freezer since I gobbled up all the cashews. So here's a recipe Ama posted with credit to author which I can use either of the ingredients I have around. Had to share as so many recipes call for cashews or macs. See the OR...yahoo.... Sonds great...I can't believe I may have all the ingredients if I can find my nutritional yeast...................Thanks Ama for posting originally and to Vegan for finding it for me.
So here goes.........
Rich Cheddar Sauce
Adapted from "Rejuvenate Your Life" by Serene Allison
1/2 large red bell pepper
¼ c water
1 c raw cashews, sunflower seeds, or almonds
1 T tahini
2 T nutritional yeast
1 ½ teaspoon sea salt
2 teaspoons onion powder (or a small slice of onion or 1 tbs or so of green onions)
1 clove garlic
2 T lemon juice
Blend until creamy. Add more water if it is too thick.

Reporting back....just made the above recipe with sunflower seeds. I did have to add a pinch more water at the very end to thin down, but it is fabulous to the max and easy to the SKIES THE LIMIT possibilities. I'm hooked and it's going on a sandwich. I will have to post to the other thread about this sauce now. Wow....a keeper!
Oh, it's going on a sandwich now--another teaser I am giving to the same people where I am getting free massages. I posted about nuga best in a thread.

Nutritional yeast is considered COOKED, but since I do a pinch of cooked I decided to be loose this time. It was worth it. I bet miso may help if you don't use nutritional yeast. Raw miso.
Even Rawsome author, Brigitte Mars, uses nutritional yeast.
I made it, brought it to the massage place where massages are free, and made it on an opened "raw" sandwich, with this one cooked ingredients. It was a HIT!
Maybe you can leave out the yeast. I'm not sure. I'm sure it would be very nice without it too. Try it and let us know! I'm excited that I can use my sunflower seeds in this recipe and not have to run for cashews which don't last with me or macs which are very expensive. Pine nuts, I would also love, but not one that stays around here either so I don't buy it; however, this recipe doesn't require it either.

It's not raw, but since it's always a fairly small amount a lot of raw foodists still use it because of the health benefits, and it gives that cheesy taste.

Thank you for posting this!!! I am trying to eat more seeds rather than nuts. I will try this "sauce" and spread it over veggies and see how it tastes. Do you warm this in the dehydrater at all or do you prefer it cold (thickened)?

For me, I'm going to use it cold. I don't have time to think about dehydrating first as when I am ready to eat I'm ready, but for things like calzones or pizza crusts I do plan days ahead. Enjoy it.
