I'll, once again, start the ball rolling with what I made for my lunch today. I had made mini-crusts for pizzas (used Alissa's calzone crust recipe) to have on hand for when the urge hit. So, today, the urge hit and I wanted something a little different, so I whipped up small batches of: Alissa's nacho cheese (undehydrated - with a few minor modifications), that refried beans recipe (posted here in the recipe section - just do a search for "refried beans - THREADS, not posts), and salsa for Mini-Mexi Pizza! I spread the refried beans on the crust first, then the salsa, then the cheese, then topped with green onions, lettuce and more salsa. It was VERY tasty and really hit the spot!!

Here's our dinner of Alissa's Falafels with Cucumber sauce, which we all liked, along with cabbage salad with beets, broccoli and scallions. Yum! I love that salad! Also, some Almond-Fig Snack Bars that I made. I bought some Turkish figs that we're not crazy about and my husband suggested "mixing them with something to come up with a tasty dish" - so I mixed them with almonds, coconut and cinnamin and dried till crispy - very good!

- Raw Guru's Veggie Burger on Almond Bread, served with a cuke-tomato salad and broccoli with Rich Cheddar Sauce.
- Mini pizza on my Barley crust, topped with Rich Cheddar Sauce, Alissa's marinara, marinated criminis, red and yellow peppers, black olives and garlic. Mmmmmmmm! Oh, and the lettuce is just Don playing artsie!:D

This was a grand ol' weekend.
My pizza - with mozzarella cheeze (Allisa's recipe modified - used cashews and nutritional yeast) and A's marinara with the following toppings: red onion, red, green, and yellow bell peppers, black olives, and italian seasonings.
It's really good.
The crust recipe I posted in the main forum earlier under the heading "I can't lie".
Mad good.
Also including a pic of the tapanade-stuffed tomatoes we had for dinner.

Matt Amsden's (Rawvolution) Thai Coleslaw... I can tell I'm going to be making this very often. It's one of the best coleslaws I've tried in a LONG time! If you're reading this Matt, thanks for this one!!

My first picture post!
Here are my Cardamon Coconut Cookies (based on Living Cuisine's Caramel Coconut Cookies), and some marzipan I made for my kids. The ones along the top were going to be strawberries, and I tried painting a few (not in the picture) with beet juice, but it didn't work. My kids still liked them anyway!

RP's brownies. OK, so I finally made them. Don't know why it took me so long. My daughter came home from school yesterday talking about some brownies a girl in her class had yesterday: "how good they looked, etc". Not to be outdone by Little Debbie, I made a quick batch of these brownies and sent my daughter to school with them today! Thanks Christine! They are SO WONDERFUL!

my fiance loves watermelon so now that we have a blender, he takes chunks of watermelon and mixes it up to make a watermelon smoothie type drink... soooo good and refreshing and it's pure watermelon!

This is Chocolate pudding from the book "Raw food Real World" I made with young thai coconuts paired a tart cherry sauce~ just get a bag of frozen organic cherries, a little raw agave and blend well, and be sure to save a few cherries to stir in. It's like a black forest pudding!
Why are the photos so small? Is the correct size still 600 x 600? cuz the link didn't work on rawkinloc's post about the photo size, so I am wondering....?
O well guess I drew the fool card tonight. here goes nothing!...this is 600 x 440 size....is that okie?

here is what i have just had:
Koftedes ("Meat Balls") from The Raw Greek by Gina Panaya. They are so tasty. The recipe calls for you to dehydrate them, but i don't have a dehydrater so had them as is. They were really good.

Carmella, that Asian Noodle Soup! (Still missing that drooling smiley!) it looks just divine! Actually all of it does!
After having had enough of dehydrating for some time I suddenly had the urge. This is what came out of it! I started by dehydrating the cake when I realized it ought to have some filling so I whipped up some raspberry jam (raspberries and dates). The cake is a couple of bananas mixed together with dates, cinnamon, walnuts and stone ground flour. Tasted really nice!

I call these fajitas but I think I'll change their name to faladas. They remind me of eating fajitas because of the spices that I use but they can be eaten just like a enchilada because of the size of the tortilla. They are soooooooooo good that I could just jump up and down, turn around, and touch the ground.... okay, okay,okay, I know I should get a grip.... is it necessary to get so excited about food. They just taste so good and you don't have to have use a dehydrator for these, the veggies are similiar to grilled veggies. I love John's Life Tortillas from sacredsymbiosis.com. They are great for making a variety of things. I use the spicy wraps for the faladas.
The pictures are of my spicy salsa, seasoned "grilled" peppers, guacamole, life tortillas, and then the other picture is the finished product (also throw in some onion and shredded lettuce) The seasoned "grilled" peppers really set this dish off bring out the flavors of the other ingredients.

Creamy durian fruit pudding:
2 pods of fresh frozen durian ( i used the pods allready packaged in the freezer section of a local asian food market)
1 fresh mango
1 ripe banana
1 young thai coconut~ water and meat ( buy at an asian market)
juice from one lemon
Take a heavy knife or cleaver and crack open the thai coconut. Pour the coconut water into a high speed blender then scrape out meat and put that in the blender too. Peel the mango using veggie peeler and slice it up and put in blender. Take ripe banana and break in chunks and add to blender. Cut lemon and squeeze the juice into the blender. Put lid on and blend at high speed until thick and creamy. Makes two dishes of creamy custard. Enjoy!

A few things I have made lately....
1. Chocolate pudding topped with some frozen berries.
2. Falafel - spring roll wrapper, topped with Moroccan Carrot sauce, Alissa's falafel crumbs, chopped tomatoes, cucumber, red peppers and some baby greens.
3. Open Faced Sandwich - Mediterranean Almond bread, topped with Eggless Egg Salad, baby greens, tomato and some perfectly ripe avocado.

Today I tweaked Alissa's Purple Pocket's recipee and also altered her chinese dipping sauce recipe. I changed the veggies that went inside the roll. I made the sauce (didn't use oranges though and some pepper). I let the shredded veggies sit and soak in the sauce for about 30 minutes or saw while I did some other thing. I also soaked the red cabbage leaves at the same time to help them soften up a bit. Then I filled the cabbage leaves and rolled them into rolls. I put them in the dehydrator and drizzled and covered them in more sauce. I just let them stay in there for 5 hours while I did some house work and other thing. I just had them for dinner. They were great. Simple but delicious.
The first picture is of the spring rolls surrounded by some sliced peppers that I let marinate in that sauce. The next picture is the red cabbage rolls by themselves. Another successful experiment!

I made calzones again the other day and was a little short on cashews/macs for the cheese so I used Alissa's cheese for one and Rich Cheddar Sauce for the other. They both turned out fabulous! Man, I just love those calzones! Alissa, you're a genius!

And the fantastic all-veggie soft wrap (I've been looking hi and lo for this recipe for months!) with a Cheesy Spinach Spread, mung bean sprouts, peppers and alfalfa. Deelicious! Such a nice change from the heavier crackers and breads. I can tell we'll be having tons of those this summer:

Everything looks so yummy! Well, we've been juicing more than anything around here, and eating the occassional salad - so I don't have much to share. Except this: I've been dehydrating sweet persimmons for a snack for all of us (kids and me and hubby). Wow! It's like God's grown it and Excalibur dehydrates it - is there a better candy in the whole world???!!! I think not!

Well here's what we had for dessert tonite. My own rendition of Coonlie's Tahini Fudge. I was gonna make the Store Bought Frosting to go on top but Don threw away the warmed up coconut oil, thinking it was water... LOL
Ah well, gotta go with what's happening so I made the topping for Fairygirl's Chocolate cream Stack. Oh wow! What a treat! Thanks Coonlie for sharing!

Almond Cake
Crust:
Combine the following ingredients, mixing well:
1 cup ground almonds
1 tablespoon oil
1 tablespoon honey
1/2 cup chopped or crushed dates, soaked for 1-2
hours, then ground
1 teaspoon vanilla
1/2 cup raw carob powder
peel from 4 tangerines, well ground
If mixture is not firm enough, add psyllium husk, or shredded coconut.
Form into crust on a flat plate.
Topping:
Blend the following ingredients well; add water with a teaspoon if needed:
1/2 cup almonds
1/2 cup olive oil
2-3 tablespoons honey
juice of 1 medium lemon
1 teaspoon vanilla
Spread evenly over the crust.
Decorate with fruits, berries and nuts.
Chill.
Serves 12

here are some apricot almond cookies with almond butter on top. They were SUPER chewy and the ladies I work with loved them... so did my fiance. Let me tell you, they didn't last long!

1 cup organic almond pulp
1 cup organic dried apricots (soaked)
1 cup organic dates (soaked and pitted)
1 cup unsweetened shredded coconut
cinnamon to taste
mix all the ingredients in the food processor adding the soak water until a dough like consistency. Dehydrate at 115 for 12 hours or until firm yet chewy. Enjoy!

Well, I have to exercise a bit untill I can measure up with you... but today I made supertasty Frühlings-Wraps (Spring-wraps)... Well... actually its just salad in wrap-form... very simple... for those who like simplicity:D

Doesn't even need the cream cheese icing, but with that they are out of this world. It actually tastes like real cc frosting I think>

Alright, here's the pizza we had for supper tonite. This is a new pizza crust I'm trying out, made with buckwheat and sunseeds. I topped it with Rich Cheddar Sauce (still, my fave cheese!), Alissa's marinara and marinated peppers, crimini mushies, and asparagus.

The crust was yummy but not as awesome as Erica's or the calzone crust, I thought.
And here's Tropigal's Garlicky Toasts (posted on this board). All I can say is wow! These are made with slices of jicama and boy, I swear they DO taste like garlic bread!

WOWSERS, everyone's culinary skills are FABULOUS. Okay, my first time posting and it's simple but I'm greatful to share.
This afternoon, I made Katugi which is a popular Korean kimchee for the spring time. Oy-ee which is a cucumber kimchee is also great for Spring and Summer. All made with fresh organic ingredients.

I made a delicious pizza! I didn't get it in the dehydrator soon enough to really soften the veggies but it was still really good.

Those nori rolls and kim chee look yummy. It all looks yummy. Here is a pic of the Ubi ( a purple sweet potato) ice cream I made a few months ago. I got the idea from my former caretaker i had when I was sick with apl leukemia in 2004. She was filipino, and she brought me some of this one day. It's very popular over in the Philipines she told me.

OK - my first two, with some bumps in the road:
I tried Russell James' Wilted Kale Salad with a Creamy Chipotle Dressing (http://therawchef.blogs.com/russell_james/2006/11/wilted_kale_sal.html). I used jalapenos instead of chipotle peppers, to stay as raw as possible. The dressing was awesome - the kale, I think I used too much sea salt to wilt it. It tasted wonderful, just a little too salty - I will make this again, just be more careful on the salt:
Then I tried The Raw Table's Cranberry Almond Slaw (http://www.therawtable.com/recipecoll/cranslaw.htm). Big problem - my food processor stopped working, so I had to cut everything tiny by hand. It didn't look the best, but it tasted divine. I'm taking some with me to work tomorrow. This is the first recipe I used agave nectar in (I didn't have any when I made the Wilted Kale Salad - maybe that would have neutralized the salt?)

I made a pasta dish with the artichoke/mayo "sauce" (I posted the recipe earlier today here) as the base tonight (thinner because I only used one avocado in this batch - see recipe as posted for thicker version).
I poured it over zucch noodles, and added some sliced plumb tomatoes and fresh basil. If I made it again, I'd add some soaked sun dried tomatoes and possibly some sliced button mushrooms. For a little extra kick, I'd add some hot pepper flakes... for more flavor, I'd add some homemade onion salt and/or sea salt.
Seriously - this is yummy. And filling. I had to save half for lunch tomorrow.

Here is what my hubby made for our tea tonight. A beautiful raw meal, his second raw creation.
Fresh basil pesto salad with a tomato like salsa, with radish, tomatoes, oil, sprinkling of sea salt. Garnished with cucumber strips and lime slices.
It was so tasty and had a beautiful aroma. Really fresh and alive taste. he is a natural raw chef :)

Don't tell anyone I used Lucious Lasagna (Carmella blog recipe) to make the Eggplant Parmesan. How funny...right? Oh well and too late now. It's officially Eggplant Parmesan for the sake of avoiding arguments. I didn't make the portobello mushrooms. Here's her Lucious Lasagna link:

Didn't have macs so didn't use.
Lesson: Only will marinade with warm water and salt. No more olive oil by the tons. I discovered this really late, but it worked with water.
Here's the pictures of my Eggplant Parmesan. First two are before pictures; last two are after coming from dehydrator. I made tons so will have to put in freezer tomorrow night after hubby sees what is waiting. Have to then figure out how to store which I may start thread for.
Okay, enjoy the pictures and since you can't have a few bites, you can't help me eat it, but perhaps slobber over yourself seeing these creations.

I finally made something worth taking a picture of...
Alissa's Carrot Cake..with the Rawkinlocs variation...
Also pics of Fudge Balls, and Cheesecake.
This is a good use for the pulp left over from making coconut milk. I used 1/2 cup coconut oil, 1/4 cup honey, and mixed in as much leftover pulp as would absorb, maybe 2 1/2 cups. Shaped rounded teaspoonfulls all at once to keep them white. Then droped them one at the time into a small plastic container of cinnamon (maybe 1/4 cup) and shook from side to side to roll and lifted out with a fork. The oil soaked into the cinnamon in a minute or so.

Here are some of my latest creations! In no particular order:
-RP's Brownies with EPP's raw storebought frosting, with my boyfriend behind the brownie getting ready to take a bite! Yumm!
-Alissa's Corn Chowder - first time I made it, and I really loved it! It was so simple!
-Raspberry Apricot Puff Pasties! I used Alissa's recipe and added some raspberries to the cream (and used almonds instead) and boom: instant dancing on the tongue!
-Chinese Veggie Wrap - My most surprising and delicious creation yet. It totally mimics a "cooked chinese" meal with the best part: garlic chinese greens! I used cauliflower for the "rice" with almond butter and ginger. Then I sliced some red peppers and added all of the above in a napa cabbage leaf. Now for the best part: marinated dark chinese greens in nama shoyu, olive oil and lots of diced garlic! Overnight is best. :)

Rawkinlocs cinnamon rolls. I FINALLY made them and they are wonderful! Simple and purely delicious (pardon the pun...:p ). My "glaze" is just whipped honey, vanilla and orange zest.
And if you're wondering what the white "flour-looking" stuff is on the outside, I used coconut powder when I rolled out the dough so it wouldn't stick. It made it much easier to roll up when I was ready to - adds a nice flavor too. You could also use more almond "flour" too.

This tastes nothing like mint chocolate chip ice cream, I just called it that because that's what it looks like LOL.
This was inspired by a recipe in Ani Phyo's book. I just made a couple of changes (added the dates and almonds, and changed carob powder to cacao nibs, which changes the whole color of it but I liked how it came out)...
1 avocado
1 banana
4 pitted dates
1/8 cup cacao nibs
sliced almonds for garnish
Mix avocado, banana, dates, and cacao nibs in food processor until smooth. Garnish with almond slices. Enjoy!

This isn't the nicest presentation, but it's tasty: Zucchini pasta with marinara and not meat balls. I don't have a spiral slicer, so i made farfalle, not spaghetti. The marinara and balls are from Jennifer Cornbleet's Raw Food Made Easy, which is a book that comes in handy, since I don't have a dehydrator yet. Her Not Meat Balls are so good, like tuna without the fishy taste!

Here is my dessert from last night...Yummy Cheesecake with sliced banana & Raw Wildflower honey drizzled all over.
This is what I"m eating right now...Kale & Avocado salad (posted on this thread) with pine nuts & kalamata olives added to it. I LOVE this! I never liked Kale eating SAD...but this is truely amazing!! Yummo. :-)

WOW. Can you post recipes for some of those? Particularly the taquitos, eggplant slaw, and peanut teriyaki eggplant! And if not I'll just keep sitting here and salivating over your photos.

Here's the stuff I made today since I didn't have my chocolate class after all!
The first one is Matt Amsden's Chocolate Balls
The second one is Alissa's Crepes, with a strawberry kiwi sauce, and dusted with raw cacao powder.
We had so much fun. I was dancing around to the Rawkin' Radio shows and music and making yummy raw food!:D Talk about being made with fun and love!

Ketchup, BBQ Sauce, Sour Cream, Mustard
I randomly decided to do this today. NO clue why lol. I have nothing to use them with. I had my parents be guinea pigs though and they liked them. The BBQ sauce was the best. I never liked it on SAD diet though.
