ok. this is surely a dumb question.

but when they talk about dates being pitted and soaked, what does that mean?

i got some dates from the coop in the bulk foods. and i don't think they have pits. so i'm thinking i don't need to do that. but then, what would i soak it in?

but the sad thing is i'm not even sure what a fresh date looks like.

if you bought it and it says "pitted" it means that it does not contain any pits anymore. If it doesn't say this, then you'll have to split the dates and remove the pits yourself. Soaking them you just make sure htey're in a container and covered by water for (not sure how long) until they're hydrated more and softer so they can be digested easier and more workable if you're using them in a recipe.
