My dehydrator arrived today - YAY!!! I am dying to make some breads but most of the recipes in Alissa's book call for wheat berries. I am gluten and wheat intolerant so can someone tell me what a GOOD substitute would be? I have some buckwheat that I can sprout - how would that taste? Any suggestions. I am so used to substitutions when cooking a SAD diet but have no idea where to begin here :).
