Does anyone know if they'll work well for raw recipes such as ice cream, fruit pudding, etc.? Do they freeze well & how can you tell when they're ripe?

Guess no one knows.
Try them in recipes and see for yourself!! Best things sometimes start as experiments...
We eat red bananas, but I just eat 'em plain. The darker the skin, the better. I wait until the stems start turning black.

I would imagine they work the same as regular bananas. I love red ones, they are sooo good! They are a bit creamier and sweeter than yellow ones, but essentially, the texture is the same. I'm sure they would work fine! :)

Thanks. Got them in an order & have a choice whether to give them back or not.
