My Alfredo is lumpy...

I just made the fettucini alfredo and I kneaded the alfredo in with my hands like it said. But the alfredo is still all lumpy and not evenly distributed...so it's like eating noodles with chunks of sauce. Any idea how to spread it out a little more or is this how it ends up? Thanks!

I think most people end up adding a fair amount more water...give it a try a little at a time to thin it out.

Good idea. You think it's too late to add now that it's mixed in with the zucchini?

I think it should still be fine to water it down now.

You'll find though, after you let the zucchini sit awhile in the sauce, that some of the water will come out of the zucchini and automatically water it down. However, I still found that it was necessary to add water. Just mix it well.

Thanks. It is very tasty stuff! Dangerously so considering there are 3 cups of nuts in the recipe!

I love the alfredo sauce. I'm wondering...since someone mentioned how many nuts were in it...if you could use almond milk....let me back up. Has anyone seen the recipe or TRIED it from "rawfoodchef" for making "MUSHROOM STROGANOFF"?? (if you haven't it was FABULOUS!!) What if you left out the mushrooms....used almond milk blended with the zuchinni cores from making the noodles...and then maybe SOME cashews to thicken it?? Maybe I'll give that a try....make sure to add the other "alfredo" ingredients from Alissa's recipe. Since I don't have the recipe in front of me, it's hard to say. The zuchinni cores thickened up the almond milk though....hmm. I'll give it a try and get back.

Great idea! You would just need to add the brags, lemon juice and garlic. Please let me know how it turns out if you try it. Hmmm. I need to try that mushroom stroganoff. I used to love stroganoff. Can I just find it on here by searching? Thanks.
