How long do I soak the dates for Alissa's date nut torte? Overnight? And do I just put them in a bowl of water with a towel over them?

Also, do all raw nuts need to be soaked before eating and/or used in a recipe?

You could just soak them for a half an hour. It's just to soften them up so you don't wear out your food processor and make them more the consistency the recipe calls for. I, howeve, am a bit lazy and do a lot of my unbaking on a whim so I rarely soak my dates. I just throw em in and they do just fine!

However, I will sometimes fill a bowl with almonds and soak them through out the day incase I decide to make something. If I don't I just use them in almond milk.

Only soak the nuts if the recipe specifically states to do so. Like if it says in the ingredients list "1 cup almonds, soaked". If it just says "1 cup walnuts", you don't soak them. Alissa has advised it will change the texture of the recipes if you soak and the recipe didn't call for soaking.
