Well, Momma and I had a hankering for tacos this weekend. We had flaxcrackers made...some of which were pliable because she had used allot of veggies and avocado in them. Just whipped up some of Alissa's Nacho Cheese (with jalapeno added), some quac, and some taco meat and we were in heaven.

My Taco Meat (sorry I didn't measure):

sprouted aduzki beans
plum tomatoes
sun-dried tomatoes in olive oil
onion
garlic
cayenne pepper
chili powder
cumin
splash of Nama Shoyu

Put beans in FP and grind just until the chunks are the size of hamburger meat. Put in bowl. Next, put all remaining ingredients in FP and process well. Add to beans and mix well. Set aside to marinade for a few hours. Then, put in dehydrator for an hour or so. Yum!

This "meat" turned out to be too spicy for Momma so she made her's using cauliflower in place of the beans (I'd used them all in my version) and she left out the cayenne. A somewhat different flavor but still sufficiently like "taco meat".
