I marinated the jicama as recommended and let the "fries" sit out overnight. Anyone ever put them in the dehydrator?

Just FYI - I left them in the dehydrator for several hours and they came out crispy and delicious.

I really really really want to try this but can't find jicama anywhere near me. I even live in a spanish neighborhood but haven't found it in any of the little bodegas I've been to nor have I seen it in the bigger markets. *sigh*

I looked for jicama last week, and while the local market had some, it looked old and wrinkly..YUCK! I'll wait for some fresh. Thanks for the tip, did you leave the jicama in the dehydrator overnight??

They weren't quite that crispy - but I suspect if I left them in there longer (it was only a few hours) they would get that way...

Cool. Thanks for the reply and pic. I actually don't like how hard potatoes get, so maybe this is a good alternative for me.

It's def an interesting flavor if you follow A's recipe. Next time I'm going to try making cheesy fries - with nutritional yeast, etc.
