Oh my gosh, those truffles were so good.
My whole family liked them (which is amazing!). Even my husband liked them and he doesn't care for whole dates at all. He said they tasted like Almond Joy's.
Thank you for creating such a wonderful and very easy recipe.

Chocolate-Dipped Date Truffles
Chocolate Dip Ingredients:
¼ cup agave nectar
¼ cup coconut butter or oil (at slightly warm room temp - need to be liquid)
3-4 tablespoons raw cacao powder (you may also use carob)
¼ teaspoon vanilla
pinch of sea salt
Truffles:
8 large medjool dates
cold almond butter
With a sharp knife, carefully make a small slit in one side of each date. Remove seed while trying to keep the date as intact as you can. Fill the center of each date with a small bit of almond butter and pinch to close. Set to one side.
In a small bowl, combine, coconut oil or butter, with cocao power, vanilla and salt. Add agave and stir very well until smooth. Take your dates and dip each one in the chocolate mix and place them on wax paper. Allow them to sit in the refrigerator for about 5 minutes. Remove from wax paper and enjoy.
If your agave nectar is cold, you will need to move quickly so that the coconut oil doesn't harden too fast. However, this makes a much nicer, thicker coating for the truffles.

Sorry guys - I just saw this thread.
faith4u, I am SO glad your husband likes them. My husband really likes them too! It's become one of my favorite recipes, I must admit. I am putting it in the first issue of the magazine. And since you asked, final production of Purely Delicious is just around the corner. I am waiting on two ads that should be in today, then it's off to the printer! I've included 12 new recipes - well, not entirely new to you guys. Some are tried and trues from The Raw Table, one is Alissa's (thanks again Alissa) and another one is from a friend at eLivingHealth.com.

OT: Can you please give us, perhaps in another link or at your website which states/stores and areas we can expect to find your magazine. I will probably be down to Sunflower Market again Wed. so I can talk with them or get name contact if you haven't made that yet.

You know, that's a great idea. I have been keeping a data base off-line with that info, but it would be great to upload it to the web site. Thanks for the idea - I'll work on that soon.
In the meantime, I haven't had time to contact the store you suggested. If you are able, that would really be helpful. Otherwise, I can do it next week sometime.

And I made your wonderful truffles again for Valentine's Day. Don hadn't tried them yet but he absolutely loves them too! Oh, and so did my neighbors...

The last batch I made I actually put some whole almonds inside the dates instead of almond butter. They were very good too!
Everyone loves this recipe and it is so easy. I just keep making them until we run out of the coating. It makes a lot. Love them!!!!

Shall I contact locally Sunflower Market, to find out contact info. as well as Wild Oats which is also local? While at it Vitamin Cottage too? I know last two for sure have corporate offices here. Just let me know so that I am not duplicating efforts, but for sure will check on Sunflower within next few days. Hoping to meet Meredith from our group here tomorrow so may do that at same time; otherwise, I'll call.
