I am on azurestandard.com trying to figure out my order. They have hulled buckwheat or whole buckwheat. Which one am I supposed to be getting for sprouting for recipes? Thanks!

I use hulled buckwheat. Hulled is the first picture.

Yes, you want HULLED -- otherwise the hulls are really tough and difficult to chew and digest. Or as Emma would say, "YUCKY!"
Remember, too, when you soak the buckwheat to sprout it for buckwheaties or a recipe, you must rinse it a couple of times daily and what comes off will be very slimy and stringy... that is normal. Just rinse it a couple of times.
When you dehydrate buckwheat after it soaks it makes the most wonderful crunchy cereal... a lot like grapenuts but not as hard. Put it together with your favorite chopped nuts and fruit and I add oats, and it makes a GREAT breakfast!
I use a jeweler's loupe to see when my grains first sprout. That way they don't get bitter. The loupe is a cheap one. You could use a magnifying glass of any type.

Plus, if a recipe calls for sprouted buckwheat it is measured AFTER sprouting...

What a cool idea! I was actually wondering about how not to let them go "too far"...

Yeah, plus I'm just weird that way. I like to watch surgeries and look at things through my loupe ... bugs, crystals, my fingers. ::laughing::
The world is such a spectacular and fascinating place!

Cool... So do you use your sprouts before they get any length of visible tail on them?

Nope. As soon as I can see the sprout I use it.

That's what I meant, you can see it starting but doesn't really have a "tail" per se, right?
I had thought about doing this but thought they're more nutritious if they have some tails on them..
But... I'm tired of waiting for sprouts... They never seem to be ready when I need them... LOL

Do they sell sproutable buckwheat groats in most stores? Or should it be specially ordered?
