Hi,

I am thinking about getting Alissa's book as I have been really contemplating starting on this lifestyle. I have been back and forth the past few years between veganism and vegetarianism. My only question is: Are the recepies in the book filled with wheat? Or is there something that I can substitute the wheat for in them? I have a bad allergy to wheat and gluten so I want this to be something I can easily stay on. Also do you need a dehydrater? And if so any suggestions for a middle of the road priced one?

So just a couple questions from someone who as she rights this actually is getting very eager to do this.....

First, not a silly question at all. Second, some of the recipes have wheat, but not a whole lot of them. The main ones with wheat are "some" of the bread recipes but there are ways of making it without - you could use buckwheat which botanically is not a "wheat" but rather a "fruit" - I believe it does not contain any gluten. I'm not sure if you can do other grains, but if so, you could also sub any recipe containing wheat with spelt, barley or raw oats.

I don't have a dehydrator, but I do have a Vita-Mix, and use it almost every day. If I had a dehydrator, I would use it rarely; I might dry peppers sometimes, or make a cracker. But even before I got the Vita-Mix I was trying to make smoothies by mashing frozen fruit with the potato masher.

thank you....I just ordered the book and am looking forward to getting started....and luckily I am only allergic to wheat....I grew up eating rolled oats everyday....so fabulous and thanks for the info on the dehydrator!!!1
