I just read Alissa's book and it was amazing. I am starting the Raw diet in one week - I can't wait! I read though the recipes and I'm wondering about the ones containing nuts. Do all nuts have to be soaked? I am kind of confused about this. Also, when you spout nuts do you eat/use the sprouts or just the nuts?

Welcome to the site! Congrats on reading Alissa's wonderful book and beginning your raw journey! :)
For the nuts, only soak them if the recipe states they are soaked. Like if the recipe says "2 cups almonds", do not soak them first, use them dry. If the recipe says "2 cups almonds, soaked" then you will soak and/or sprout them first according to what it says. When you use sprouts, you use the whole things. So if it's buckwheat sprouts, for instance, you use the whole buckwheats with the tails attached.

First off - welcome!
I have gone by the theory unless it states soaked nuts, I don't. I may be wrong. Hopefully someone will chime in here.
Secondly, when you soak nuts, they really don't "sprout" like alfalfa and such. You will eat the whole thing!

Do u throw out the liquid the nuts have been soaking in?

yes, throw it out-from what I understand it has chemicals that we don't want to eat.
also, the thing about soaking nuts is that sometimes they are not soaked because they need to be ground into a powder first. But even if they are not called for soaking, like with the cream of broccoli soup (which is AMAZING), I think you could use soaked almonds if you wanted.
