View Full Version : banana crepes w/ blueberries, OMG!

i got this recipe from another forum, holy moly is it ever GREAT! my SAD boyfriend ate them all, except for one of course! i don't know who the credit should go to, so if you do let me know...

Crepes:
Blend some bananas (i used 3 large) - spread on teflex sheet and dehydrate to get banana leather - make sure its still pliable. Then cut them into 6 rectangles.

Blueberry Cream Filling:
1 cup cashews - soaked
1 cup fresh or frozen blueberries (i used frozen wild ones that i picked this summer)
handful medjool dates
juice of 1/2 lemon
few tbs agave nectar

Blend all until smooth and creamy.

add some filling to the end of the banana leather and roll it up...just be aware of the filling squirting out the bottom, though that's part of the fun!

my boyfriend ate them with vanilla ice cream, so any kind of cream would make this divine!

I made these for the first time today. I just ate them for breakfast. I wanted to make a peach sauce for the top...but when I put the frozen peaches & 2 Tbl of honey in the food processor...out came the best peach sorbet. I put 8 crepes in a large bowl with all the peach sorbet. I am in heaven. It is so unbelievably great. I love these crepes & the blueberry filling is fabulous. Thanks so much for this recipe.

The Banana crepes alone rolled up are simply fantastic! Very Yummy!!

Maybe I can get to taste them when we meet soon? It could be a nice intro surprise. Think off to Sunflower later.

OT: Last night's rawluck you couldn't make was...fabulous--wall to wall people and dishes...all raw and delish. Ill keep you posted for her next one.

I just had these for breakfast and they were yumm-mmmmmy! I used frozen raspberries instead of blueberries... that's all I had on hand. So easy! I just put the banana in the dehydrator before going to bed and when I woke... it was all ready.
