I made this pie last night, first one I ever made and it came out sooooo goooood! My husband said it was THE BEST thing I have EVER made. He had seconds!
Crust:
3/4 C Cashews or Macadamia nuts (not soaked)
3/4 C Walnuts (not soaked)
1 1/2 C dried coconut flakes
1/2 C pitted dates (not soaked)
1/2 t salt
I process the nuts first and grind them until fine, then I added the rest of the ingredients. Press it into a pie pan and stick in the freezer while you make the filling.
Mixed Berry Filling:
1 bag frozen organic mixed berries (they are small... about 10oz bags)
1 bag frozen organic blueberries
3/4 C pitted dates (soaked)
1 T lemon juice
Make sure the berries are defrosted, you can of course use fresh and you can use whatever berries you like... I just happen to have these in my freezer. I put the whole bag of mixed berries in my blender along with the lemon and dates and blended away. I then put it the mixture into a bowl and added the bag of blueberries and mixed it up. After the crust has been in the freezer for about 20 minutes I then poured the mixture into the crust and transferred it to the fridge, covered in wrap.
Now you'll have to wait. You can eat it within 2-3 hours but I found that leaving it overnight was best. It was much easier to slice a piece after it's been in the fridge a bit. This will definitely be added to my dessert rotation.
