Hey everyone!!
I bought a leek and now don't know what to do with it.
any suggestions on soups or smoothies etc.
I love to try new things...just sometimes I get ahead of myself :)

How about faux potato/leek soup? That was one of my favorite things, cooked wise. Use jicama for the "potatoes," and cashew for the base, and add spices, maybe some coconut water, wing it! :)

That's funny because in my organic food co-op "box" of goodies I get each month there were two leeks. I'm going to "wing" it and make RAWvolution's famous onion bread. I'll let you all know how it turns out. :D

They are more mild than onions. I would use them anywhere you would use onions.

Can you eat leeks raw?
Just the white part or the green part too?
