i love this new concoction and so do all my PHO, meat eating friends:

2 c. almonds ground coarse
2 T. date paste
1 c. cherries, i use frozen right now
1/2 c. gogi berries
about 1 c. agave nectar (i don't really measure)
dash of sea salt
vanilla extract about 1T.(optional) sometimes i forget it that's why it's optional (lol)

mix all ingredients together, the "dough" will turn pinkish spreading cherry goodness throughout the dough. spread onto a teflex sheet about 1 inch thick in a square-ish shape and dehydrate at 115 degrees for a few hours. flip it over onto a hard surface and cut into squares. then dehydrate at 115 overnight or so. the outside will be a bit crunchy but the inside is all chewy, ooowee!

Sounds delicious! Do you thaw the cherries first and then cut them up or leave them whole?

good question, i totally forgot since it's in my head...

i do cut up the cherries into halves or fourths, i bought organic bing cherries frozen so they are rather large. last time i made them i used them right out of the freezer, they will hurt your fingers after awhile (i say this from experience), so i suggest using a cutting board. you could thaw them a bit, but use the juice as well...

let me know what you think. substitutions are great too, i also bought organic frozen blueberries for the next go round...
