How does one use shredded coconut (the dried kind from the health food store)? Can you just sprinkle it on stuff (like chopped banana) or do you have to soak it first? Also, can you make coconut milk out of this by blending with water?
How do you use it?

I use it in smoothies and fruit puddings, sprinkle it on my banana-almond butter mixture, mix it with my grawnola, mix in cookie recipes...haven't tried making coconut milk, but don't see why it wouldn't work by just soaking it (or maybe not even soaking), blending with water and straining it or drinking it as is.
I make sure it's unsulfured. Some have reported it isn't truly raw, but I still use it.

Hmmm...I dunno that soaking dried coconut would make anything much like the milk of fresh coconuts if that's what the original poster is wanting.
I mean, juiced fresh fruit doesn't taste anything very like the liquid off that same fruit, dried and soaked. I dunno about the nutrient differences, although I'd guess they'd be just as dramatically different, but I'm thinking flavor-wise and in recipes, that soaking water from dried coconut wouldn't do the job at all in a recipe calling for coconut milk.
