today i ended up steping inside a bakery, and goodness gracious did i realise how much i love ginger oat crunch slice! i walked out without eating anything (amen!) but i soo would love to come up with a substitute.. and i think i have an idea. i just need some help with the icing..

RawVeganMom posted her recipe for nola bars, and I think they'd be perfect with a little ginger icing on top. Does anyone have a recipe for icing that I could add ginger to?

RB, RVM's nola bars are great. Could you do something with dates, cashews, vanilla, and ginger or pumpkin pie spice?

Just a thought!

Try this:

Coconut cream
dates
ginger
vanilla
agave to taste
dash of sea salt

As for proportions, wing it. :)

I saw your photo on the picture thread... Which frosting recipe did you end up using? They look delish!

Thanks! Well I decided to go with the coconut cream idea, as I've tried the cashew frosting before and wanted something a bit different. I added coconut cream, three dates, agave, vanilla, sea salt and grated ginger until the consistency was one I was happy with. It is absolutely INCREDIBLE!
