After RawVee posted the amazing Tomato Soup recipe from Tanja I took a look around her website and viewed a bunch of the video's. This recipe really stuck out. It sounded so good... so different. I just got my hands on 2 coconuts... so you know what I was making. Unfortunately, those 2 coconuts only gave me 1 cup of meat between the 2 of them so I had to 1/2 the recipe but it is SO AMAZINGLY YUMMMMMMY. I left out the cayenne but added everything else. The curry really adds a great flavor... you all must try this.

Chocolate Pudding (curried or otherwise)

2 Cups young coconut meat
1/2 Cup coconut water
1/2 Cup agave syrup
1/2 Cup raw cocoa powder
1 Tbspn vanilla extract
1 tspn curry powder
1/4 tspn cayenne pepper
1/4 tspn sea salt

If you'd like to try it uncurried first, just drop the curry powder and the cayenne pepper. Curried or not this one should find its way into your dessert rotation soon. Let us know what you think!

Ama, this was next on my list to try. It sounds amazing!!!! I'd like to do a hot version too with some cayenne.

Here's another yummy Tanja recipe:

Thai Coconut Soup
1 1/2 cups coconut meat
2 cups coconut water
1 small hot pepper
juice of 1/2 lime
2 TBSP fish sauce analog (1 stick kombu* in 1/4 cup water)
1 TBSP Lemongrass
1 TBSP ginger
1 TBSP agave or honey
1/4 cup red bell pepper garnish
2 green onions garnish
1/4 cup cilantro leaves garnish

*Kombu is a type of wide, noodle-looking seaweed. By soaking it in the water and then using the water, it replicates the fish sauce normally used in this soup.
