Lately I've been eating a pound of greens every day (or as close as possible) and I feel SO wonderful. My skin is better, I have even more energy and I know now about the power of greens. It's pretty amazing! I try to eat them whole in salad form so I can really enjoy them in their natural form but any way to get more greens is great.
I LOVE dark leafy greens!

What else do you put in your salad & what do you use as dressing (if you use it)?

what greens do you consume? Do you think there is a difference nutritionally between dark outter leaves of romaine versus the inner heart?

I'm with you, greens are amazing. A wonderful book with lots of detail and recipes is "Green for Life" by Victoria Boutenko. My best to you all. :)

I get bored with greens so easily. How do you spruce them up?

I just buy those big 1 lb tubs of mixed spring greens. The brand is Earth Bound Organic. I'm not sure exactly all of what's in there but I know it has baby romaine, frisee, red oak leaf, spinach and some other buttery, rich, dark leaves. The only romaine it has is very tender baby shoots so they are still dark and a tad bitter. The darker, thicker and more tender the better.
I just slice up some tomato, cucumber and carrot and toss that on with a little dressing made of fresh squeezed lemon, a tad of raw olive oil and some fresh italian herbs. I toss this all together in the tub and work on it all day. The tubs are a little expensive ($5.99) but it's a whole pound and it really is awesome quality. Also, a pound of lettuce is a lot of food so that makes up the most of what I eat in the day. I think it's worth it, of course, one can also find the same greens or close to it by buying them in single bulk and mixing them but I haven't had the time lately and I really enjoy the earthbound brand.
Oh and I never used to like greens but after nearly 8 months raw my tastebuds have totally competely changed and I actually enjoy the taste now so I don't need to spruce them up because I enjoy them. I really so savor the taste. That may take awhile for most people so my advice is keep trying it and eat them when they taste good to you. Your tastebuds will change, most likely. Don't force yourself to eat them if they don't taste good to you.
