I want to make Alissa's carrot cake recipe today for my "birthday cake" (tomorrow!! lol) ... http://gliving.tv/greenchefs/alissa-cohen/wedding-carrot-cake/

But I don't have walnuts or cardamom. What can I use to replace them? (I have cashews, sunflower seeds and pumpkin seeds as far as nuts/seeds go) And I don't have raisins, I don't like them... do you think the cake will be okay without them?

Do a banana search for Alissa's carrot cake... there have been multiple threads discussing it, with some great tips for making it come out in the best possible way....
