I am searching for a recipe for Sugar or Shortbread Cookies. I have checked all of the recipe books that I have and the board, and I do not see anything. ..

I am envisioning something light and crunchy. I am sure almonds and agave nectar would be nice in the recipe...Anyone have a recipe that would fit this- or any ideas?

(they would be good to dip into the raw chocolate pudding or put RP's icing on top..mmm)

Maybe adding fresh coconut meat and vanilla too? 1/4 an apple would make it all stick together without taking away crunch. (pectin)

Let us know what you figure out...I'll try too. :)

I don't remember where I read this, but I think I saw something about taking dried shredded coconut and letting it run in the food processor for a lengthy period of time to make a doughy sort of thing... which you can then form and dehydrate to make a shortbread-like cookie. *shrugs* Haven't tried it and can't cite a source, but it's a thought...

Let us know, you've got me thinking shortbread now!

Oh, yes, I love to take shredded coconut and a bit of maple syrup and coconut butter in the food processor to make treat balls. This mixture also makes a great pie crust. It smells heavenly.
