Recipe for Alissas Nacho Cheese Sauce or other cheese sauces?

Just wondering if anyone had the recipe for Alissas Nacho cheese sauce or another kind of cheesey sauce? I don't have my dehydrator yet or Alissas book quite yet so any recipes would be greatly appreciated! THANKS A BUNCH!

Cheddar type sauce

Blend until creamy:

1 small red bell pepper
1 c raw cashews
1 tsp. or so of sea salt
1 slice onion
1 clove garlic
juice of 1/2 small lemon
Spices can be added if desired.


Cream cheese

2 cups soaked cashews
1 T water
1/8 tsp salt
1/2 tsp. lemon juice (RP's suggestion)
Process till creamy.

Cover and leave out overnight at room temp. Then refrigerate to get more solid.

You can flavor this creamcheesewith herbs, garlic, chives, chopped onions, dried fruit, honey, etc.

Hi there,
I make a very similar cheese sauce to Doe's. The main difference is that I use a mixture of cashews, almonds and sunseeds. Don't have the exact recipe on hand but I just posted it on my blog. Yummo!
