So I made some absolutely unbelievably delicious raw peppermint patties, and they are SO pretty, and I really wanted to post their photo, but I tried and... I'm at a loss. I don't know how to do it. No clue. But can I just say, trust me, they're almost as fun to look at as they are to eat! I got the recipe while browsing some other sites, and just HAD to make them! I came on here intending on putting a picture of them on the "photos only" thread, but I'll have to settle for just TELLING you how awsome they are! THEY"RE AWSOME!!!!!!! :D
If I ever figure it out, you can rest assured I'll post their photo soon!

Addendum: The recipe is below, and thanks to girlsmiley's assistance, the photo is as well!

Okay, I hope I'm allowed to do this. The recipe is from rawsacramento.net, and all the recipes there are free to all, so I'm guessing it's okay. Also, I kinda changed their's a little, so... here it is:
Meltaway Peppermint Patties
Mint Layer:
3 cups raw, shredded coconut
1/3 cup honey
1/2 tsp mint extract
Chocolate Layer:
3 cups dry, raw shredded coconut
1/3 cup honey
1/8 organic cocoa powder or raw carob powder
1/2 tsp vanilla extract
1-2 TBL water
1/8 tsp sea salt
In a food processor, put all of the mint layer ingredients in and process until creamy (I put the coconut in first and processed it for a while, until it was a gritty texture). Set aside. In food processor, put all of the chocolate layer ingredients in (except water) and process until well-combined. Add water until it's a doughy consistency. Separate the chocolate mixture in half. In a loaf pan or other small dish, press one half of the chocolate mixture into the bottom. On top of that, press the mint mixture. Finally, press the second half of the chocolate mixture intop of that. Freeze for about 5 minutes, then cut into squares and ENJOY! I hope I didn't forget anything!
