i need a bit of inspiration from everyone.. 2 questions:

1. what do you like to use mangos in?
2. and what about fresh ginger?

any ideas are most appreciated and welcomed!

Mangos are soooo good with some lemon/lime, salt and cayenne...mmmmmm, practically any fruit and some vegetables are good like that!

I mixed mango and frozen bananas in the food processor and had this awesome mango/banana ice cream.. yum! and I didn't think I even liked mangos that much!

I love to put fresh ginger in my Carrot juice. Also if I am making a yummy date and nut pudding I add a little fresh ginger with some nutmeg and cinnamon.....its so beautiful!!

I do the same thing for mangos as Luna99 said! Otherwise I just make a mango and banana smoothie for breakfast! I've seen someone cut up mango chunks and sprinkle them with Chilli flakes as well. They compliment each other well! :)

I just slice and eat fresh mango. I eat one almost every day.

Ginger, on the other hand, I don't use so much because my DH doesn't care for it. When I do use it, it's usually in a salad dressing.

I use both in a blended drink....Add some pears too. Yumm....

I really like mango juice - it is so thick!
I love mangos just by themselves the most though.

I use ginger all the time. I like making thai inspired dishes.
I do Almond butter, lemon, ginger, a little garlic, some olive oil, a little nama shoyu and cilantro and blend in food processor. I like to pour this over zuchinni noodles with chopped cashews and cilantro on top... So good!

I also put ginger in all of my juices for an extra kick.

Smoothie: Freeze the mango and some strawberries.

Put frozen fruit in the blender with a banana and some water, add a green... and you've got a tasty smoothie that doesn't taste like greens. :)

You can make a mango lassi, like Indian restaurants serve.

Or take young coconut meat and water, mango, vanilla, and a little agave, blend, freeze, and make mango coconut ice cream!

I like to make Alissa's carrot pecan burgers and them dip them in a mango dip I make by blending a mango with a little water, cardamon (or any Indian spice you like) and then hand mix in some onion or shallots - yummy!
Mango in shakes is great.
Make a ginger dressing - don't have a recipe but I bet you could sub ginger for garlic in almost any dressing recipe.

I make a fruit salad with Orange, banana, kiwi, pineapple, asian pear, red grapes, (sometimes pink lady apples) and mango's mmm the smoothness of the mango with the crunchiness of the other fruits is very good.

I made a recipe out of Julianno's Raw cookbook before that used mango as a garnish for a butternut squash soup - it was delicious! The flavors went very well together.
