When a recipe calls for things like jicama, beets, carrots, sweet potatoes, cukes, etc. do you peel the skin off? I know in some veggies the skin is nutritious too. is it all in preference or should the skin be kept on? Thanks!

I never peel the vegetables. I just juice, grate or eat the vegetables.

I peel the skin if it is waxed [like the cukes here, can't get organic] and in some cases if not organic. I do peel my non-org carrots if eating them, not for juicing.
