I made layered a ice cream cookie yesterday. Family said it was a 10!!!
I made the cookie out of raisins, coconut flakes, almond butter, cocoa and coconut cream. I might have thrown some almonds in there too. I think that was it... really fudgy and really really good.
I made the ice cream layer out of cashews, pine nuts, 1/2 banana, a few tbsp OJ, coconut cream and cocoa, a little water. Blended in food processer then strained to make extra smoothe and creamy.
I put a layer of cookie at the bottom of a large ramican then a layer of the cream. Layer of cookie, layer of cream then layer of cookie.
I put it in the freezer for about an hour to let it harden up. I cut it out of the ramican and pushed it down just a little to look more like a cookie. Then I put back in the freezer. We all had some last night. When you cut into it it looks beautiful. It is SO good!!! Family said it looked gourmet... yeah me!
