View Full Version : Dehydrating at 145 degrees

I just got a dehydrator yesterday and I'm confused. Everying I read said around 118 degrees.

But in David Wolfe's book he talks about dehydrating for the first 2-3 hours at 145 degrees and then turning the temperature down. The Excalibur manual also says this.

Excalibur said the dehydrator won't get hot fast, and also said that the moisture in the food prevents it from going over 118 degrees.

I was just wondering if people followed this or had opinions on this?

It's a good idea especially if one is dehydrating thicker foods. Makes for a faster process and keeps from mildewing and molding.

I never go higher than 115. I think to make jerkies its like 145-155 * which is not raw.. but its meat so you want to get it hot so you don't get sick.
So I just dont put things in that have to get that hot. To leave anything that 115* just takes forever.. and I end up having to leave it over night so I lower it down to 95* for the night and its ready in the morn. :)
