View Full Version : Yum! Zucchini pasta + pesto (and a question)

Tonight I made zucchini angel hair pasta and pesto sauce (I tried the marinara and came to the conclusion I hate raw tomatos :o ) it was sooo good! I can't believe how much it actually looked like regular pasta!!
But since it's a vegetable and watery, it turned the pesto into a "soup" after awhile which grossed me out and I couldn't eat the rest. Is there any way to reduce the water in the zucchini??

sometimes i pat it dry or use a salad spinner.

That sounds yummy Everclear! I may just try that. I'm not partial to the tomatoes either. I did that dish before and had the same challenge. If anyone else has any other ideas I'd love to know too.

You can also pat with a paper towel to absorb some of the moisture OR, take and lay out the zucchini pasta on a dehydrator tray and pop into the dehydrator just for a little while (not even an hour). The salad spinner idea from lil fairy' sounds good too!
Also, make sure you keep the "pasta" and pesto seperately stored and just top with pesto per serving.

Hubby doesn't like the water either so I make the pasta and put into a colander first. Salt, mix well, and massage it slightly then let it sit in the sink while preparing the sauce. Then rinse real well since I don't want any salt left on it. Mash down in the colander to remove the rinse water. Fluff up and put on plates. Top with sauce. Hubby loves it that way. I got the idea from watching the stroganoff video (http://www.rawfoodchef.com/html/videos.html).
Hubby also likes it dehydrated until warm.
