Has anyone ever made mock sloppy joes out of ground up eggplant?
I going to try this later on but if anyone has made this before please let me know how you did it and how it turned out, please.

I haven't but it sure sounds good. My few forays into raw eggplant were not terribly successful, although I did read somewhere that one of the raw chefs froze the eggplant prior to preparing the recipe which resulted in a more "cooked" texture while remaining essentially raw.

:) I use to do that with tofu in order to make mock hamburger meat.
