Has anyone made cocoa covered almonds? Do you think it would work to make a sauce then dip almonds in and then dehdrate?

If anyone has tried let me know how it went.

OMG! Why couldn't you mix raw cocoa powder with honey, roll the almonds in it and dehydrate it?

What if you made this sauce from Alissa's website:

Just like chocolate!
1 cup crème de cocoa coconut oil
3/4 cup raw carob
6 Tbsp raw agave nectar (or more to taste)
A pinch of sea salt
You can add vanilla or other flavors such as mint as well
Blend all in a blender until smooth and creamy. Place in little cups or dividers and place in freezer for an hour. keep refrigerated as this will melt.

Then coated almonds with it (the sauce BEFORE freezing it as the instructions say) and put them in the freezer rather than dehydrator?

Here's what I'd do...

1) Soak and dehydrate the almonds
2) Freeze them
3) Mix up a mixture of chocolate (however you like it best - I like 50/50 cacao butter to powder with agave to sweeten)
4) One at a time drop the frozen almonds into the chocolate, leave for a few seconds, and lift out (let drip for a second) and place on a plate
5) Repeat as desired (chilling will always help the chocolate stick to and firm up faster so you might want to freeze again until they are ready for the second dip.

No need to dehydrate unless you're doing a high water content chocolate batter... this one would just melt.
