Hey, rawsome ones.
I bought some Hen of the Woods mushrooms at Whole Foods today. I love the meaty taste of them, and I was thinking in the car that they'd make a great base for taco "meat." Has anyone tried using mushrooms for this? I'm going to make a spicy sauce for them, chop up some cilantro, avocado, tomato and lime juice and make some "sour cream" and then wrap them up in mustard greens. If anyone has some good 'shroom recipes, I'd love to see them!!

Are you sure you can eat Hen of the Woods raw?
You need to be careful with wild mushrooms. Some can make you very ill if you eat them without cooking.. morels for example can give many people horrid diahhrea. Do research!
From the Audubon Field Guide
Before you eat a wild mushroom, be absolutely sure your identification is correct and that the mushroom is a safe edible. The first time you eat any species, take only a small portion and do not drink any liquor. If you experience no side effects, try a slightly larger portion the next time. Dont eat a large quantity, no matter how often you have eaten a particular mushroom; mushrooms, in general, are indigestible.

Doh, Rowan! I just assumed that you could eat all mushrooms sold in stores raw. HoTW isn't a morel, but it's widely suggested to not eat it raw. Darn. Thanks so much for the heads up, though!

I eat regular white garden mushrooms raw. They replace my meat most times. Dice and season and yummers!

This Week's Recipe Mushroom Pate
Ingredients:
Makes enough to fill one medium sized bowl; roughly 10 servings
* 3 cups soaked almonds (if not soaked then add ½ cup of water to this recipe)
* 30 button mushrooms pre-marinated for an hour or two in olive oil and tamari
* 3 garlic cloves, minced
* 4 Tbsp lemon juice
* Small bunch of fresh parsley
* ¼ cup of the marinade (oil and tamari)
Directions
1) Break down the almonds in a high powered food processor such as the Cuisinart.
2) When almonds are broken down, add all the other ingredients. Try to achieve a smooth consistency. Add a little water if necessary.
RAW COACH'S TOP TIPS:
* Serve with salad, crackers, in wraps, or as filling in hollowed out tomatoes or other vegetables.
* If you dont have time to marinade the mushrooms first dont worry. Simply add the mushrooms as they are (washed, nothing added) and add a Tablespoon of olive oil and tamari. Taste test to see if it suits you; add additional oil, tamari or mushrooms depending on your taste.

please tell me you do not pick white garden mushrooms from your yard and eat them...?
I've watched several people die from death angel poisoning using this strategy...

Thanks for the info about hotw mushrooms/wild ones. I'm definitely going to check into that. I have eaten them plenty of times raw and never experienced any bad effects from them. My favorite is to put them in the marinara sauce from Alissa's angel hair pasta recipe.

Thanks everyone!! I gave the fancy mushrooms to my landlady, who will cook and eat them. You know, Whole Foods should put a sign over all their mushrooms (they have a huge assortment) telling people to cook them. If I hadn't asked and Rowan hadn't graciously warned me, I'd probably be in the hospital right about now. :eek:

In Canada? Naw, too much snow. I go to the store to buy my mushrooms lol.
Garden mushrooms? Button mushrooms. Unsure what they call them but they are pretty yummy ;)
