I ate out last night at a thai restaurant and had the basil rolls... I think they were completely raw except for the rice paper wrapper stuff they were rolled in...

anyway, I LOVE these things and the dipping sauce is really what gives it such a great flavor. I asked the waitress what kind of sauce it was and I think she said "plum sauce".. (she had a very strong accent)...

does anyone have any wonderful raw plum sauce recipe? if not I'm going to just experiment myself until I can get it to taste something similar to the sauce there, because it is SERIOUSLY SO GOOD! mmmmm.

You could puree some really ripe plums, agave, add garlic and some shoyu and other asian spice and put it in the dehydrator for a few hours to thicken it up like a jammy-ish deal? Dunno? sounds like a good thing:) Good luck

here's my plum dipping sauce recipe:

4 cloves garlic, minced
½ inch slice of raw ginger, minced
1 small onion, minced
½ cup dates, soaked
½ tsp dried chili (optional)
4 plums, pitted and chopped
Juice from 1 lemon
1 inch slice of fresh raw pineapple
Nama shoyu or Braggs to taste

Put all of the first ingredients into the food processor and process until smooth. Add the nama shoyu or Bragg's carefully until it tastes like you like it. :D

Plum hoisin sause from Raw food real world
2 cups fresh plums dehydrated @ 115 for 8 to 10 hours
1/2 cup sesame oil
1/2 cup mirin
1/4 cup nama shoyu
1/2 maple syrup
1/2 cup gingr juice
sea salt
Mix in vita mix
