View Full Version : Yummy beet slaw

I had some golden beets that I needed to use, and found a recipe for beet slaw. ( I adapted it slightly)

Mix together:
1 tsp grated ginger
1 fuji apple ( I ran through my spiral slicer)
3 small golden beets peeled and run through spiral slicer
3 TBSP apple cider vinegar
1/2 tsp sea salt
1- 2 TBSP of extra virgin olive oil

this is even better as it sits. I would imagine a red beet would work as well and be very pretty. It's good all by itself, also wrapped in a kale leaf or nori with cauliflower rice, mushed avocado and a little braggs. Use equal amounts of beets and apple.

Being new to raw, I belive this is all raw, please correct me if I am wrong.

The olive oil is only raw if it says raw olive oil. Otherwise, it's gone through a heated process. You can find raw olive oil all over the place online (Alissa may have some on her site!)

A twist on this is to use a crisp, sweet pear instead of the apple.
Pears and beets RAWK together.

Thanks for posting this recipe. It sounds great.

I love apples and or pears with my beets and Cabbage, too.
I can't wait to try it, after my cleansing fast.;)

Just read this recipe out loud to my husband. We're excited, but we had the portabello mushroom with guac for dinner and we're stuffed. Tomorrow is the big day for that cole slaw. Mmmm, can't wait.

We make a variation of this a lot....grated beets with grated carrots, lemon juice, and cilantro. Wrap in lettuce leaves with a little seaweed.

An Old Post but a Great Recipe. I haven't had Golden Beets but I make a variation with Red Beets and it is RAWsome.

Thats sounds great. I use to love beets when i will still eating cook, though I didn't know what would taste good preparing them raw.
BTW make sure the olive oil is cold pressed, other wise heat might have been used to extract the oils.

I love raw beet salad. I have a book called "Cooking Thin" that has basically the same recipe in it but with regular beets, not golden.

Sounds good! I think I will have to use half red and half golden beets. I am a sucker for colorful food and I swear that if there is a rainbow on my plate, the food tastes better!
