OHHH..The question..I have never bought that many apples-but my guess would be to peel/ chop, add some lemon juice & freeze. that is just a guess.

You can always juice them. Or cut them up and dole out to friends and co-workers. Why not spread the joy?

Thinly slice and add cinnamon, warm in dehydrator, garnish or dust with nuts
take to work and serve.
Make applesauce and store in fridge.
Juice :)

You could make applesauce and freeze that.
You could juice them.
You could try and peel and core and freeze them and use them in smoothies.
Alissa's got some recipes in her book using apples. Do you have her book?
Get off your computer and start eating them!!! :p

Wow, glad to see they still sell "bushels" somewhere. Sure isn't here in Southern CA. Looks like you already have some really great suggestions. For sure the applesauce and freeze and chop, deseed and freeze for smoothies get my top vote. Would squeeze as much air out of the freezer bags as you can and maybe have added a hint of lemon or lime juice to help retain color.
Have not tried the apple pie but it sure looks good in all the pics I've seen on this site. Did have the most wonderful apple, cinnamonny dehydrated crackers at Optimum Health Institute (I know a little ground flax was in them for sure)--served with plain applesauce. Talk about fantastic!

If you freeze any, make sure to coat in lemon juice or other citrus first so they keep a good colour.
