I made my first batch of 8 raw-e-o's. they are so good!

Here is my recipe if anyone is interested in trying it out. Super simple! Promise.

Cookie part:

1 1/4 cup almond pulp or previously soaked almonds ground finely.
1 1/4 cup of flax seed (I used golden and dark for an "oatmeal" colour.
1/2 raw honey or agave ( I used honey)
1/2 Extra virgin olive oil or coconut oil (I used olive)
Add extra water slowly to help mixture become doughy.
1 Tbs vanilla or 1 vanilla bean flesh scraped.
1/2 tbs cinnamon (Optional to taste)

Set this mix in a blender.

You can add dates or raisins if you want more sweetness. This cookie is not sweet. You want it that way so when you put the creamy sweet filling it makes up for it. Too sweet would be too rich.

Lay plastic wrap on a cutting board. Put dough on the plastic and roll it into a log. Set in the fridge for min of 2 hours.

After 2 hours take it out and peel apart sections to roll flat. The log will give about 4-5 sections. Make balls with these sections and then lay another plastic wrap on top of the ball and take a rolling pin or a heavy can of anything and roll it out to 1/2 inch thickness or what ever thickness of cookie you like. The thinner the fast you can eat it! Cut into circles. I used a metal dipping sauce container to make circles. :D

Place cookies in dehydrator for 7 hours or longer according to your ideal firmness and flip every 1-2 hours. Set at 115* or at your "fruit roll" heat setting on your dehydrator.

Once your cookies are done stuff with Alissa's cream cheese frosting. I don't want to post it due to copy laws so hope you can find it somewhere. Or buy her book =)

Delicious!!!!!!!

(The recipe may seem long but its super EASY!!!)

Ya its like an oatmeal raw-e-o. It's nothing like a store cookie texture but its such a great alternative and I'm a super picky raw eater
