I mostly lurk around here, but I have a question I couldn't find an answer to on the search. :D I opened up a young coconut last night, & it had a ton of good water in it. I didn't drink it all, so I put the rest in a covered container in the refrigerator. I was wondering how long the water will be good (assuming it keeps at all)? TIA!

I would say no more than a day or two. If you can't drink the water by itself, try making a smoothie, or using the water later that day for another recipe (like a sauce or dressing for fruit).

Freeze it?

I went ahead & made a smoothie with it last night--it was great. I agree, I wouldn't try keeping it for more than a day or two, but it was ok in the 'fridge for 24 hours.
I was wondering how it would freeze.
