I put about a cup and 1/2 of nut pulp in the dehydrator at 8pm. Can I leave it in over night - about 11 hours? Will that be too long?

No, that's not too long - I have left mine in overnight many times before. Just be sure that it's completely dry, which shouldn't take long at all - overnight should be good.

Why are you dehydrating nut pulp? Just curious... :D

I'm sure you were probably directing your question to the OP...but I personally do it so I can use the nut pulp later (I have tried the "wet" (fresh or frozen) pulp in recipes and didn't care for the texture) so I started dehydrating it and grinding it into flour and then store it for use in pie crust recipes, the cinnamon roll recipe, etc.

I'm gearing up to make Rawkinlocks Cinnamon Rolls......!
I took the pulp out this morning and it was just right.
