Hello all. Okay, I was going to make some more of Alissa's stuffed mushrooms because I have quite a bit of pesto left over. I made the pesto last week. It still smells and tastes fine. How long until I get rid of it? Also, I am thinking about making the zucchini pasta and marinara. Can I spiral the zucchini and make the pasta sauce in advance and keep it in the refridge? Will the zucchini get too soggy? Thanks for advice. Oh, I was planning on keeping the zucchini and marinara sauce seperated until time to mix. What about the Fettucini recipe? Can I make it in advance? I am a teacher, and I want to have food for lunch and dinner. I don't want to cook or uncook for that matter when I get home. I have some time today to put most of the ingredients together, but I don't want to wake up to a soggy mess.

PS - yeah you can totally make the marinara and noodles in advance and then just mix it together when ure ready to eat. :)

Honestly, I find Alissa's recipes the size for a 4 person family.
I almost always cut them in half at least.
Otherwise, I end up throwing out food.

Raw food fills you faster, you don't usually eat as much.

I do cut most recipes in half. Mostly because I am new at this, and I don't always like everything, so rather than make the entire portion, I halve it. There is still way too much food.
