View Full Version : Corn "flour" corn chips????

For Rawkinlocs and maraw, and anyone else who actually made corn chips using dehydrated corn...ground up, to make corn chips, I was wondering how they turned out. Looking for a TRULY crunchy chip to take with my RAW chili for our couples chili bash this weekend!!!!

I'm STILL wondering if anyone has made corn chips with corn "flour" I guess I'll be the first.....that's scary. :rolleyes:

I did make a recipe using dehydrated then ground corn. It turned out great! I can't devulge the recipe as it will be coming out in "...purely delicious." Maraw's new magazine that will be coming out in March.

Will the magazine be purely raw?? Just about food or other stuff??? I'll check the website.

I know this is an old thread but does anyone have a recipe for this, perhaps not quite the exact recipe but any other recipe? I got to thinking that corn is now available in the grocery stores and when there's a good sale, it would be great to pick up a ton of it and process it into flour by dehydrating. Then we could put it in the freezer and make things with it. Thx.

i made raw dehydrated corn chips twice. once they turned out good (i had to use frozen corn, as Alyssa's recipe says to and fresh corn was not in season at the time).

the 1st time i just thawed it, scraped off the corn, put in some sea salt and put in the VM then dehydrated on Teflex sheets. it came out good. VERY good.

the 2nd time i did nothing diff but the chips came out with a fairly strong FISHY taste. NOT good. didnt eat.

in both cases, the chips stuck to my teeth in a weird way.

Hummm... Which recipe did you do? Because Alissa's Corn Chips are made with FRESH corn on the cobb... The recipe says to "Scrape the Corn off of the Cobb..." I did make it with frozen corn a few times, and it came out good. It's better with the fresh corn though... The chips come out solid and crispy, but chewable.

Alissa's Corn Chips are a staple for me! I've been eating it since I bought her wonderful book. Here's a photo of mine...

At the restaurant where I work, we put yams in our corn chips. Because the yams are so firm and starchy, the chips are nice and crunchy.
They get a bit soggy if we don't keep them refrigerated.
The tortillas that we use for our tacos and enchiladas are made mostly with corn and flax, and they are a lot less crispy than our chips.
