I am trying to cut back on nuts, so I racked my brain for a low fat version of the crepes and this is what I came up with. I didn't choose the fruits intentionally and you can use anything for the crepes and sauce I am sure.
I made pear fruit leathers, then I had some apple so I made an applesauce thickened with flaxseed for the filling. Then the only thing I had for topping was banana so I used that. Yum!!!!
I was thinking you could probably do the banana thickened with flax or psyllium for the filling instead of the topping. That would be good if you had a berry or tropical topping for the sauce. The possiblilities are endless. I was also thinking you could just cut back on the nuts by subbing some banana.

I just love my chunky applesauce daily and bet it would be nice in the crepes. Now I have to find the crepe recipe.
In food processor chop/stop/chop/stop apples with lemon peel. Wow, sounds like breakfast and lunch and maybe dinner meal today as long day ahead of me and gone. You can probably add some berries too.
I don't normally use flax so wouldn't be something I would have thought of till you mentioned.
Oh, cinnamon may be nice too add also.
I bet even the chili, yani's, page 1 posted would be a nice filing inside. I even made it last night without dehydrating, but slicing veggies thin using food processor. It was delish. One day dehydrated, other day make and eat without dehydrating and both winners.
Can you please share the crepe ingredients. I don't need the recipe especially if it is from Alissa's book. Thanks a ton.

Great idea greenfeline! I don't really like nut cremes in large amounts but like it as a garnish. This is a great and lighter alternative...especially for summertime. Thanks for posting this!
When making nut creme the nuts never make it to the processor...esp macs...too good on their own and a rare treat :D

Thanks so much for this idea! I have just come of the master cleanse and have decided to cut back on my fats...I have been dreaming of Alissa's crepes for a few days now as I have the banana leather already dried and a bunch of frozen fruit in the freezer. How about a banana/mango filling with a touch of something...vanila/cinnamon/allspice? With a mixed berry puree on top? Or banana/berry with mango sauce on top...mmmmm

Isn't Alissa's crepe recipe banana leathers? But you used pear, is that right?

I only ever made mine with all banana...
Banana fruit leathers with banana ice cream and oooh wow.. its not over powering. Nice light and probably for two stuffed and covered in "ice cream" It might be only 300 cals.. if that and 2-3g fat Yum yum!

Umm 2??? :eek: You mean I have to SHARE??? :p And this is why I am now QUARTERING my recipes lolol but yes that sounds divine...I'm thinking banana/mango ice cream with cinnamon or maybe caramel drizzled on top...oh god...

Ooooh! I like the caramel idea! Yes, Alissa does hers with banana, but she has a few other leather recipes in the book (and you can make leathers with anything), so I just substituted pears because I had a bunch! As said before the possibilities are endless!
