Also, can I take it off the shell and then freeze it for later use?
If I can dehydrate it, do I have to shred it first or can I leave it in chunks. It'd be pretty hard to shred those skinny pieces...

HI Walkin :) - Are we talking about Baby youngs or the brown ones???

I know you can take the baby young ones-and open, then freeze both the water & the meat.
I bet you could do the same with the mature ones. I have Never been able to get those open w/out just smashing it to bits-so I don't buy them.
I would try & see how it works. :)

The brown ones - can't seem to find organic young Thai coconuts anywhere...
Simple solution - this is the first time I've tried this...
On the top of the coconut, you'll see three round dots. Stick a large nail on one of the dots and hit it with a hammer. It goes in quite easily. Pull the nail out and do the same to another dot so you'll have air intake as you pour the coconut water out.
Then put the coconut into a pillow case and either smash it on concete or put it on a hard surface and hit a few times with a hammer. It works well and the "mess" is kept in the pillow case. Actually not near as messy as I thought.

I had to special order the young ones-& I paid big bucks for them & 1/2 were bad... :eek:
Thanks for the great tip on opening them...I will try it as I do love coconut water/milk...Besides~sounds like fun!!! :cool: :D

You can also just smack it between the eyes with a hammer (gads that sounds violent) to get a good crack started and pour the water out...and then another wack and it's open. I use a tea towel over it so you don't get shell in your eye and works best if you're crouched and the coconut is on the floor. After opening it, wedge a butter knife between the shell and the meat and then twist while applying the pressure...it will loosen the good stuff out in chunks...it will be brown on one side...nutty and edible.
Trust me, it was my kitchen assignment starting at 5 years old....
